Accord (Food Additive) Lobo is a blend of phosphates which binds and emulsifies comminuted meats. Hence, it can retain moisture from the meat protein. When cooked, this powder makes the meat emulsion firm with better adhesion and less tendency to render out. It also helps retain the meat weight.
Directions: The dosage is 0.3% of the total meat weight. For example, use only 3 grams (1 teaspoon) for every 1 kg total meat weight or 15 grams (5 teaspoons) for 5 kg. total meat weight. Sprinkle Accord evenly over meat while making emulsion. Remember to use as fresh and cold meat as possible to begin with. While in the process, make it quick and do not let the meat warm up. Add a little chipped ice if the emulsion looks condensed. Refrain from adding acid or sour condiments such as fish sauce or seasoning sauce. The cooking method for meat balls and sausages is in hot water (70 degrees celsius) not boiling. Cooked meats will float to the surface. Transfer to another bowl filled with cold water. Then let dry before serving.
